Miniature Rainbow Pancakes with Sweet Maple Cream Cheese

Hey Ho it’s Friday!

Which means for some of you it’s the beginning of the weekend and the end of another work week. I’m a Mom to 3 little ones, so there is no sleeping in for me. But the hubbers is home and it is much more relaxed then the typically go, go , go mode the kids and I are in during the week. And I do get to make fun, silly breakfasts, which is a fair trade type of thing in my book!

So before I sign off for the weekend I wanted to share these Miniature Rainbow Pancakes with Maple Cream Cheese Filling.

My kidoddles LOVE these.

If there is anything I can do to make their mornings more bright, colorful and cheerful, I do it. They are getting bigger each day and  I am slowly starting to understand that this  frame of time I have all for myself with them is limited. So I do my best to insert a little Mommy Magic into the things I can and help build a framework of vibrant memories they can carry on to adulthood.

Sort of like these ridiculous over the top pancakes….

These have “Awesome Childhood” written all over them!!! You can make them too!!! 
You can use what ever pancake recipe you like, although I am 100% sure that mine are better tasting than any box mix, and if you don’t believe me try mine and make then make the call.

This is what you will need for the pancakes: {{Print Recipe}}

  • 1 1/4- 1 3/4 cup of flour
  • 3 1/2 Tbsp. Sugar
  • 3/4 tsp. Salt
  • 2 tsp. Baking powder
  • 1 Egg
  • 1 1/3 Cup of milk
  • 3 Tbsp. Oil
  • 3/4 Tbsp. Vanilla Extract
  • 1 Tsp. Apple Cider Vinegar
  • Red, yellow, orange, green, blue and purple food coloring.
  • In a bowl add the milk and apple cider vinegar, let it sit as you get the rest of the ingredients together.
  • In another bowl whisk together the egg, oil, vanilla and sugar.
  • Measure out the flour, salt baking powder and mix.
  • Combine all the ingredients and mix them well.
  • Keep in mind the amount of flour you use depends entirely on how YOU like you pancakes. 
  • Want them thinner, add less flour. Like them a bit thick add more. I like them somewhere in the middle of thick and thin.
Split the batter into 6 portions and color each portion the appropriate color.

(I use Americolor gel food colors. If you like to bake or decorate, these are great to have around. I use this brand and I have found them to be wonderful. They do cost a few more dollars you may have to spend initially over he brands supermarkets carry. But there is no nee to mix most colors and it’s completely worth it for the amount of use you get out of them.)

You can purchase them at most craft store or online. If you don’t have gel food coloring use what you have although it will take a lot more to get bright colors and they may never get as intense as the ones I created.

I use a TBSP. measurement to scoop out each pancake, so they are all the same size.After you make them all you should have a lovely plate of colorful pancakes like this!!

But the fun doesn’t stop here. Now it’s time to fill the layers, stack high and make them even more fun!
This is what you will need for the filling…{{Print Recipe HERE}}
  • 4 oz cream cheese
  • 1/2 – 3/4 cup Powdered Sugar
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
Mix together the cream cheese, maple syrup and vanilla extract. If you don’t have maple syrup, I would think that pancake syrup would work fine, although I myself ave never tries that. After it is mixed, add in the powdered sugar….. add more or less to get the consistency you prefer. Like it thinner add less, like it thicker add more. I know consistency is a preference thing, and it also helps to realize this is almost impossible o mess up. And even if you do mess it up, it’s still edible and delicious 🙂 Win , win!
Easy peasy weasy!!
Now stack and smear, then repeat until you have a stacked rainbow of fun.
I added the overflowing drippy top for flair and to amp it up even more. I aso added colored sprinkles and a little chocolate candy to look like a cherry, although I’m sure a cherry would work as well 🙂
 I created the look on top by filling a decorating bag with the filling and piping it on top. If you don’t have a decorating bag a small plastic baggie with the corner snipped would work just as well! Top with colorful sprinkles and you just inserted a lot of happy fun into someones morning breakfast!
