Mighty Perfect Pancakes

If you didn’t already know today is pancake day.

Yes, really there is a pancake day! And I’m sure none of you know this juicy little tidbit about me but I’m a pancake snob!

What, you never heard of a pancake snob????

Before you start judging and rolling your eyes, let me explain a bit. I’m not snobbish per say, I’m just very particular when it comes to pancakes. I am the first person to doctor a box of cake mix to make it taste like my great, great Aunt Nancy’s  famous cake. (Who also by the way is totally fictional.)

I know to some this is silly, but in my world pancakes are (or at least used to be) a huge deal. But when it comes to pancakes; a box mix, no matter how fancy just won’t do. I have a pan that I only use for pancakes. I will literally try to hurt anyone..Ahem hubby, who might try and use it for something else.

Sad…yes. But true.

On another note…totally not pancake related is my little guy is four months today. He’s is growing so fast. I remember last Valentine’ day is when I took the pregnancy test and was floored to find out that I was pregnant again. 3 kids in 4 years….holy crap. Thank God he is sweeter than a spoonful of sugar!

Now back to my silliness in relation to pancakes…..It’s taken me years and years (not really) of tinkering and toying with recipes until it happened. I had done it.

I had created the perfect pancake.

Fluffy, moist with a soft infusion of sweetness in each bite. Pure, unadulterated yummy, goodness! Now being that today is Pancake day, I thought it appropriate to share my Mighty Perfect pancakes with you. First because I’m nice like that, and because everyone should know what a perfect pancake tastes like.

Really they should.

This is what you will need: {{Print Recipe}}

  • 1 1/4- 1 3/4 cup of flour
  • 3 1/2 Tbsp. Sugar
  • 3/4 tsp. Salt
  • 2 tsp. Baking powder
  • 1 Egg
  • 1 1/3 Cup of milk
  • 3 Melted Butter
  • 3/4 Tbsp. Vanilla Extract
  • 1 Tsp. Apple Cider Vinegar
  • In a bowl add the milk and apple cider vinegar, let it sit as you get the rest of the ingredients together.
  • In another bowl whisk together the egg, melted butter, vanilla and sugar.
  • Measure out the flour, salt baking powder and  mix.
  • Combine all the ingredients and mix them well.
  • Keep in mind the amount of flour you use depends entirely on how YOU like you pancakes. Want them thinner, add less flour. Like them a bit thick add more. I like them somewhere in the middle of thick and thin.
Heat your pan up to a medium heat on the stove and start pouring the little lovelies onto it.I personally do not use anything on the pan. No butter, no oil and mine turn out perfect every time, but if you want to I won’t judge you at all.

Let them sit. If you didn’t know, which I didn’t for a long time is that the secret to awesome delicious pancake s is to leave them alone and let them cook. You should flip them once that is all. When you should flip them is when they get all bubbly on to and the edged look dry, like this…

Then and ONLY then should you flip them to reveal the golden deliciousness waiting on the other side…

Now stack em’ high, stack em low. Smother them in copious amount of butter and pure maple syrup.

Add in some pink and red sprinkles and make a sweet Valentine’s breakfast for the kiddoddles!
