Lemon Berry Cream Scones

What’s the first image that comes to mind when I mention the word scone??

If a vision a a dry, tasteless, crumbly mess flashes into your consciousness, then I have something that can re-wire your thoughts on them.

Because that is what I thought about them too, until I had my first cream scone. And let me tell you that dry, tasteless and crumbly it was not. In fact it was….

Delicious.

The recipe base for this Lemon Berry Scone is old. Not old as in 100 years ago old. But old as in newspaper clipping old circa 1998 from Molly O’Neil. A time before the ease the of the internet allowed recipes to be literally at our finger tips upon our command. Remember those days??? If not then your still a youngling 🙂

These are sweet, fluffy, light, moist with a hint of lemon infused in each bite. The glaze on top is made with fresh lemon juice and white chocolate, which adds a buttery, lemon sweetness that pairs perfectly with the scone and the taste of the fresh blueberries that burst in your mouth.

Only a few ingredients are needed and it takes literally no time at all to whip them up. Try them and let me know your thoughts.

This is what you will need…

For the Scones

2 cups flour
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 to 1 1/2 cups Heavy Cream
1/3 cup  Fresh Blueberries
1 1/2 tsp Grated Lemon Zest
Lemon Glaze
2 Tbsp Lemon Juice (About half a lemon)
2 Tbsp Milk.
1/4 cup Granulated Sugar
1/2 cup white chocolate chips
Lemon zest for garnish (optional)

To make the scones….
Preheat your oven to 400 degrees. Combine the sugar, flour baking powder and salt and make a small well in the middle of the mixture. 
Add your heavy cream, lemon zest and blueberries to the well and combine. The mixture should be crumbly and not mixed smooth. So just quickly incorporated all the ingredient just until they are loosely mixed.
Spoon onto a parchment lined baking sheet. You can shape them up a little if you like.
Bake for 15 minutes. When they are done they will have a golden brown color to the tops. And some of those lovely fresh blueberries may have also burst.

I let them cool completely before I add the glaze drizzle on top.

To make the glaze..

In a small sauce pan add your milk, lemon and  sugar. Stirring the entire time bring mixture to a boil and pour over the white chocolate chips and whisk until melted. Using a spoon drizzle over the top of each scone.

If your feeling adventurous add a little lemon zest to the top of each scone to up the fancy factor.

Enjoy them with your morning coffee, afternoon tea or alone as you carve out a few quiet moments hiding from the kids (am I the only one that does that?????)
