French Toast Bites with Banana

This idea was not born because I was trying to be creative with breakfast. Truth is it was born out of necessity!  You see before I had kids and I lived alone I had a small pan for cooking. So small that I wasn’t able to cook more than one piece of french toast at a time.

It took close to half a million years to get breakfast ready. By the time both pieces were done, the first was cold from sitting around waiting for the other piece to finish cooking and cold French toast isn’t so much fun. So one day I had one of those, “Why didn’t I think of this ever????” moments and cut the bread  into pieces  in order to get it all in the pan…it worked!

The rest of the idea developed after I ad kids and discovered that they are a small species unto themselves that…

  • Find the idea of dipping anything much more appealing than not!
  • LOVES eating foods that resemble ice pops or lolly pops hence the stick.
These are easy enough to make and you can tweak them anyway you like!
This is what you need…
  • Bread of choice
  • Small cookie cutter
  • Banana (optional)
  • Small sticks ( you can use toothpicks)
  • Your favorite French Toast recipe or the one I use below.
Get your French toast batter ready and put  it to the side. What I use is a recipe I made up, it’s not for a huge portion as my kids are small still. So It works for  their portion and a few extra full slices.You can double it or tweak it up to suit your needs.

French Toast Batter….

  • 1/2 Cup 1/2 & 1/2 ( or milk if that is what you have)
  • 1 Egg
  • 3 Tbsp. Orange Juice
  • 1 Tsp. Vanilla Extract
  • 1 Tbsp. Sugar
  • 2 Tbsp Flour
  • 1/4 tsp. Cinnamon (more or less to taste)
Whisk your flour into the 1/2 & 1/3 (milk). Then add in the rest of your ingredients, mix well and put it to the side. Now keep in mind you  can add more or less of anything in this recipe to suit your tastes, so get creative with your bad selves 🙂

With your cutter start cutting out your shapes. Don’t use a cutter with a lot of intricate shapes because a lot of that detail will get lost when the bread gets soggy from the batter. Simple = easier.

Now dip your bread into the batter and cook it up! While it’s cooking, slice your banana.If you don’t like banana replace it with something else or just use the french toast bites. When the are all cooked assemble them. I do one piece French toast, one piece one piece banana french toast. Serve with maple syrup or whatever you choose and enjoy!!
