Cheesy Sour Cream Chicken Soft Tacos.

I’ve been writing, posting and sharing on this blog for a little over a year now and since for the most part I’m not doing as much baking (due to the gestational Diabetes.) I decided to start sharing some recipes.

I  mean just because I’m not baking, doesn’t mean I’m not cooking AND I cook as I well as I bake, so I figured why not! I figured as a start I would share dinner with you.

Even my kids eat this, (Ages three and two) which is HUGE, because let’s be honest…I have “those” kids that really don’t like much of anything. I believe it was the idea that they got to “make” their own food which instantly made it more appealing!

These are easy, fun a delish. I’m a bit of a wimp when it comes to a bit of spicy kick in my foods, always have been, but if you like the heat food, please feel free to add in more. Overall the little kick this recipe has mixed well with the cool of the tomato, lettuce and avocado.

This is what you will need!

  • 1 lbs ground chicken, beef or turkey (Any type of ground meat works well!)
  • 1/2 Medium Onion Diced 
  • 1 Avocado (Cut into chunks)
  • 1 Diced Plum Tomato (Or your choice)
  • 1 tbsp. Hot Sauce(to taste)
  • 1/4 tsp. Chili Powder
  • Salt and Pepper to taste
  • 1/2 tbsp Olive Oil.
  • 1/3 cup Shredded Cheddar Cheese
  • 1/3 Cup Shredded american Cheese
  • 1/3 Cup Sour Cream
  • Soft Tortillas

To cook…..

  • Over medium heat add olive oil to pan and add onions. 
  • Cook them until they look all sort of soft and delish
  • Add in Your Ground Chicken, mix it well.
  • Add in your Salt and Pepper, Hot sauce and Chili Powder.
  • When Chicken is completely browned add sour cream and cheese’s.
  • Mix well and until cheese is melted completely.
  • Remove from heat and add in Avocado and tomato mix gently.
Spoon mixture into warmed tortillas.

I used ground chicken, because my kids prefer it in this recipe, but you can use ground beef or even turkey if that is what you prefer. I typically like more on my soft tacos, so I usually add lettuce, shredded cheese and sour cream to the mix. And if you want to boost up the protein content on this meal add in a 1/4 cup of your favorite beans!!!
